Springfield Style Cashew Chicken

This is a world-famous dish that originated in the streets of Missouri.

Ingredients:

• Oil (½ Quart, Vegetable)

• Oil (½ Quart, Peanut)

• Egg (1, Large in Size)

• Water (2 Tablespoons)

• Flour (1 ½ Cups, All Purpose)

• Chicken Breasts (3 Pounds, Boneless and Cut into Small Cubes)

• Water (3 Cups, Warm)

• Cornstarch (5 Tablespoons)

• Bouillon Cubes (6, Chicken)

• Oyster Sauce (2 Tablespoons)

• Some Pepper, White in Color and For Taste

• Cashews (1 Cup)

• Green Onions (1 Cup)

Directions:

The first thing that you will want to do is heat up your oil in a deep fryer or a large sized wok until piping hot. Then preheat your oven to 200 degrees.

Then beat together your egg with at least two tablespoons of water in a small sized bowl and set aside.

Place your flour into a separate small sized bowl and set aside.

Next take your chicken cubes and dip them first into your egg mixture and then roll them in your flour until completely coated.

Place your coated chicken into your hot oil and fry until your chicken is golden brown in color. This should take at least 6 to 8 minutes.

While your chicken is cooking whisk together your next five ingredients in a small sized saucepan and cook for the next 5 minutes or until your mixture is thick in consistency. Remove and set aside.

Once all of your chicken has been cooked pour sauce over the top and garnish with your green onions and cashews. Serve right away and enjoy.
